During my trip to Singapore, one day for lunch I met up with Darius who brought me to Holland Drive Food Centre for hawker food: http://migrationology.com/2016/01/singapore-food/ There are many many hawker food courts throughout Singapore, and in the Holland Drive area, you’ll find Holland Drive Market and Food Centre, a nice neighborhood style food court with plenty of choices of things to eat. We arrived at lunch time and it was busy, but still manageable and there were plenty of tables. Also, the food centre was nice and friendly. Darius and I split up and start ordering food to bring back to our table. We ordered some yong tau foo, some wanton mee, some braised duck and rice, and some kway chap, and finally a dish that’s known as thunder tea rice which is a vegetarian mixed rice bowl. The yong tau foo was very good, a seperate bowl of tofu and fish paste dumplings, and another bowl of noodles. The combination was excellent, and I really enjoyed the chili sauce sambal that came on the side. The kway chap, which are noodle sheets with duck and braised duck soup, was also quite tasty with a nice duck flavor, lots of Chinese herbs, and thin soft noodles. But what I thought was possibly even better was the braised duck and rice, a bed of rice topped in slices of braised duck and some duck juice all over the top of that. Another famous hawker stall to eat at at Holland Drive Food Centre is the thunder tea rice stall - that serves a dish of rice topped in a variety of different vegetables, and finally served with a green tea soup on the side. Overall, it was a little plain tasting for me, but it was a vegetarian dish, but I think it could have used a little chili sauce for extra flavor. Finally for dessert Darius got some chee cheong fun, rice noodle sheets all rolled up and served with a sauce. Special thanks to Darius and Sarah for inviting us to eat with them in Singapore. Our visit to the Maxwell Hawker Cente in Singapore A hawker centre or cooked food centre is an open-air complex in Indonesia, Singapore, Malaysia, Hong Kong, and the Riau Islands housing many stalls that sell a variety of inexpensive food. They are typically found in city centres, near public housing estates or transport hubs (such as bus interchanges or train stations). Hawker centres were set up as a more sanitary option to street-side outdoor alfresco hawker dining places. Instead of mobile food hawker carts, permanent stalls in open air buildings are provided for the hawkers. Either common shared or stall dedicated tables and chairs are provided for customers. This concept has totally eliminated street hawkers in Singapore and reduced the numbers of street hawkers in major cities in South East Asia. This phenomenon is also helped by hawker licensing laws. However, it hinders new entrepreneurs with low capital from starting business, resulting in higher prices for established hawker centre stalls. However, hawker centres can provide a one-stop destination with a good variety of high quality, sanitary food at down-to-earth prices for everyone. Singaporean food can be divided into five types: meat, seafood, rice, noodles, and dessert or snacks. Singapore is especially renowned for its seafood. Chili crab and black pepper crab are two quintessential dishes that dominate the scene and are greatly recommended to tourists. Another favourite is sambal stingray. In the meat category, Hainanese chicken rice is the most popular dish. Essentially, it is rice cooked with chicken fat, served with boiled chicken, accompanied with chili sauce. Three noodle dishes stand out in Singapore cuisine. “Fried Hokkien mee”, fried egg noodles with prawns, sliced pork and gravy, "Nonya laksa", rice noodles served in a coconut prawn broth and "Char Kuey Teow", stir-fried rice noodles with prawns, Chinese sausage, lard and cockles. In the snack category, kaya toast is the representative dish, primarily due to the use of kaya. "Kaya kopitiams" are a common sight on the island. These affordable coffee shops dish out bread toasts, spread with coconut jam and butter, served with coffee and tea. When dining out, Singaporeans often eat at hawker centres, coffee shops or food courts rather than restaurants, due to convenience, a wider range of options and affordability. These hawker centres are widespread, cheap and usually feature dozens of stalls in a single complex, with each stall offering its own specialty dishes. Well-known hawker centres include Lau Pa Sat and Newton Food Centre. Coffee shops are non-air conditioned versions of food courts and are commonly found island-wide, usually at the bottom of blocks of HDB flats. Hawker centres are the place where people can experience all kinds of different cultural food in one place. Hawker centres, or open air food courts, have come to define Singaporean food culture. Popular markets like Old Airport Road Food Centre in Geylang, Golden Mile Food Centre on Beach Road and Maxwell Road Food Centre in Chinatown offer the best of Malaysian, Chinese and Indian cooking, wrapped into foods that are uniquely Singaporean.

Sungei Road Laksa is one of the most legendary laksa stalls in Singapore. Get more info here: http://migrationology.com/2016/01/singapore-food/ Laksa is a dish that combines the tastes and flavors of both Malay and Chinese, and one of the most famous places to eat laksa in Singapore is at Sungei Road Laksa, a small yet busy stall that’s housed within a neighborhood style coffee food court shop. As soon as the stall is open, they have a line of customers, and if you come at a peak meal time or on the weekend, there could easily be 20 or even 50 people in line in front of you. Luckily, we came in the middle of the morning, so it was pretty quiet and there were just a few people in line in front of me. One of the best things about Sungei Road Laksa in Singapore is that they still cook their curry soup sauce over charcoal in a big aluminum pot, the traditional way. You stand in line, and they don’t have any choice other than how many bowls of laksa you want. The bowls are quite small, so if you’re really hungry, you could easily eat 3 - 4 bowls or so. The laksa is a Chinese style version, with a thin and not very spicy broth, and sliced up noodles, and all topped with a handful of fresh blood cockles, and I think Vietnamese coriander - which is the flavor that I really liked. The laksa was smooth and comforting, not spicy, and not too much spices, but a soothing blend. To me it almost tasted like clam chowder, yet it was prepared with cockles, so it was like noodle cockle chowder. They also added a small amount of smabal chili sauce to the side of my bowl to mix in, which provided a bit of extra flavor to the laksa. Overall I enjoyed my bowl of noodles at Sungei Road Laksa, and it made a wonderful quick breakfast. Under Singapore Immigration Regulations, foreign entrepreneurs who wish to setup a restaurant in Singapore will required to apply Entrepass if they wish to relocate to Singapore to operate their business. Food Shop License Under the Environmental Public Health Act, it is mandatory to secure a Food Shop License issued by the National Environment Agency (NEA) for retailing food and/or drinks. The application for the Food Shop License must be accompanied by the following supporting documents: • A photocopy of one of the following (where applicable): o Both sides of identity card [for application as Individual] or o Business profile of the company or o Certificate of registration from Registrar of Societies • A scaled metric layout plan of the premises showing the layout in the kitchen, preparation area, refreshment area, toilets, stores, etc. • Tenancy agreement between the landlord and the applicant. • Approval(s) from Housing Development Board (HDB) [for HDB premises only], Urban Redevelopment Authority (URA) & / or Building and Construction Authority (BCA) [where applicable] • The list of food handlers employed. • Typhoid inoculation certificates for food handlers. • X-ray certificates for food handlers aged 45 years old and above. • The list of Food Hygiene Officers employed using the prescribed form obtainable from the relevant Regional Office. Application for the Food Shop License for your Singapore restaurant is made online and the processing time is approximately 1-2 weeks. There will be a pre-licensing inspection of the premises where you plan to open your restaurant and depending on the outcome of the inspection, the processing time may be affected. Hiring Staff Starting a Restaurant means it's a need to hire Local and foreign workers as well. For foreign staff, its relevant to apply for an Employment Pass. These are the most preliminary yet primary legalities while opening a restaurant in Singapore. Since it is so new, we made a trip there looking for what Singapore Halal Food is there to eat. We have heard quite a number of raving recommendations for some of the stalls and are very eager to give them a try. Timbre+ runned Yishun Park Hawker Centre has a Payment App called Tuckshop which made the hawker centre becomes cashless. All you need to do is to download the app, top it up using the machine and you are set. The advantage of using the Tuckshop app at Yishun Park Hawker Centre is that you will be entitled to 10% discount for your purchase. That is fantastic. Alright, back to what we found and ate at Yishun Park Hawker Centre. Note that all prices were after 10% discount. 01. Nasi Campur (Malay Mixed Rice) from 4 Hands Cooking $5.49 Fazeera saw Ayam Masak Merah at 4 Hands Cooking and she immediately made up her mind to eat from there. She ordered for herself the Ayam Masak Merah, Sambal Goreng, Bagedil and a Fried Egg. 02. Nasi Lemak Ayam Taliwang from Nasi Lemak Ayam Taliwang $4.95 When a shop is named after a dish that the shop served, then it must be an amazing dish. So when I saw Nasi Lemak Ayam Taliwang serving, surprise surprise, Nasi Lemak Ayam Taliwang, I definitely have to eat that. 03. Roti Prata from S.J Sickaner Ammal Muslim Food $2.25 This roti prata stall has been entertaining long queues in the morning, especially over the weekends. When you give the prata a try, you will know why. The stall is a branch of a stall in Eunos food centre and we have been eating from the Eunos stall for quite a while. To have them opening a branch in Yishun Park Hawker Centre was like a dream come true. Yishun Park Hawker Centre does have a handful of Halal Food vendors and it was fantastic that some of them do served food which we would definitely return for. Thank you for watching.
